Kitchari is balancing for all three doshas and easy to customize even further if you desire. To balance vata dosha, consider making it extra soupy and adding a stick of kombu. For pitta, add burdock root, carrots, and fennel seeds. For kapha, play with adding cinnamon, cloves, and a bit of extra ginger.
