Makes 2 dozen 1½ inch bars

Ingredients:
- 2½ cups pitted prunes, finely chopped
- 1 cup apple juice
- ⅓ cup water
- ½ teaspoon cinnamon
- ½ teaspoon allspice
- ½ teaspoon almond extract (optional)
- 1 cup barley flour
- ½ teaspoon baking powder
- ¼ teaspoon sea salt
- 1 tablespoon ghee
- ¾ cup water
Garnish: cinnamon and organic lime or lemon peel
Directions:
Preheat oven to 350 degrees.
Simmer uncovered in a medium skillet the prunes, juice, water, and spices. Simmer them over low heat until they are thick, about 20 to 30 minutes. Add the almond extract at the end of the simmering time.
While prune mixture is cooking, stir together the rest of the ingredients (flour, baking powder, salt, ghee, and water) in a medium-sized mixing bowl. The mixture will be crumbly and not hold together. Do not let this slow you down.
Lightly oil an 8 inch x 8 inch baking pan and pour the barley crust in. Press into place with your fingers—now it will hold together! Dust with cinnamon. Bake for 12 to 20 minutes or until slightly crusty.
When the crust is done, take it out and spread the prune mixture over it. Garnish with lime peel. Or, if you can't find organic limes or lemons, cut a few thin slices of lime without the peel—this makes a striking garnish.
Put back in the oven and cook another 15 minutes. Cool and serve.
