Dreamy Date Balls Recipe

What You'll Learn

  • Date Balls Recipe: Uses whole pitted dates, brown rice syrup, vanilla, tangerine peel and almonds cooked into a thick mass, cooled, formed into 1-inch balls, rolled in date sugar.
  • Stove-Top Date Balls: Cook date mixture over low heat 10–15 minutes until water evaporates and thickens; stir in chopped almonds, cool, then shape into balls.
  • Tangerine Date Balls: Once cooled, form 1-inch balls, roll in date sugar for coating; optional ghee to grease hands, serve immediately or store as a sweet snack.

Ingredients:

  • 1 cup whole dried pitted dates (about ½ pound)
  • 2 tablespoons water
  • 2 tablespoons brown rice syrup
  • 1 teaspoon vanilla
  • 1 tablespoon organic tangerine or orange peel
  • ¼ cup blanched almonds, chopped
  • ¼ cup date sugar (or less)

Directions:

Chop the dates finely. Mix the dates, water, rice syrup, vanilla, and tangerine peel in a small heavy skillet and cook over low heat for 10 to 15 minutes or until all the water has evaporated and the dates are a thick mass. The thicker it is, the better.

Stir in the almonds and let the mixture cool. When cool, form into 1 inch balls (you can grease your hands with a bit of ghee, but be prepared to get sticky).

Roll the balls in date sugar and serve.
