What is Organic Ghee and how is it different from regular butter?

Ghee is clarified butter, made by simmering butter to remove the water, milk solids, and proteins. What's left is a pure golden cooking fat that is shelf-stable, lactose-light, and rich in flavor. Organic ghee starts with milk from grass-fed cows raised on certified organic pasture (meaning they are never exposed to or given synthetic pesticides, GMO feed, or routine antibiotics). Starting with such high quality milk carries through to a clean, more nutrient-dense fat. Compared to butter, organic ghee has a higher smoke point of 485°F, which makes it ideal for sautéing, roasting, frying, and baking without breaking down.

Banyan's Organic Ghee takes the tradition one step further by culturing the butter before clarifying. Cultured butter ferments slightly with live bacterial cultures, which produces the signature nutty, slightly tangy depth that separates a good ghee from a great one. What makes Banyan's Organic Ghee different from other organic ghee brands?

Three things differentiate Banyan's Ghee. First, it is cultured before clarifying, which is the traditional Ayurvedic method and gives the ghee a deeper, nuttier flavor than most ghees on the market that use uncultured butter. Second, the milk comes from grass-fed, pasture-raised cows on small family farms in Northern California, where animal welfare and regenerative grazing matter. Third, every jar is handmade in small batches by the same Banyan team that has been crafting Ayurvedic products for over 40 years.

This Ghee is USDA Certified Organic, gluten-free, non-GMO, and suitable for vegetarians. It pairs naturally with the rest of the Ayurvedic kitchen staples, especially when making kitchari, which uses ghee as a foundation for traditional one-pot meals. That said, it isn't limited to just Ayurvedic recipes and can be used in place of oil or butter in many different recipes.

How do I cook with Organic Ghee?

Use it the same way you'd use butter or oil, but reach for it especially when heat is involved. Ghee's 485°F smoke point handles searing, roasting vegetables at 425°F, and frying eggs at high heat without smoking or breaking down. Substitute ghee for butter at a 1:1 ratio in baking, and most cooks report a richer, slightly nuttier final result. A teaspoon stirred into morning coffee adds a buttery body without dairy. For Ayurvedic cooking, ghee is the classic carrier for sautéing whole spices to release their flavor before adding them to soups, dals, and kitchari.

Storage is simple. Ghee is shelf-stable thanks to the removal of water and milk solids, so it can live in your cupboard at room temperature, ideally cool, dry, and out of direct sunlight. Is organic ghee safe for people who are lactose or casein sensitive?

Most people who are sensitive to lactose or casein tolerate clarified ghee well because the clarifying process removes nearly all of the milk solids (where lactose and casein live). What remains is essentially the butterfat itself. Many naturopaths and Ayurvedic practitioners actually recommend ghee for clients reducing dairy because it offers the flavor and cooking versatility of butter without the dairy proteins that typically cause issues.

That said, sensitivities are individual. If you have a confirmed dairy allergy (different from intolerance), please consult your healthcare provider before adding ghee to your diet. People with intolerances usually do well starting with a small amount (a teaspoon or less) to gauge their response. Banyan's Organic Ghee is gluten-free and vegetarian-suitable, but it does still contain milk-derived ingredients, so it is not appropriate for vegan diets.

How long does organic ghee last and do I need to refrigerate it?

Unopened organic ghee typically stays fresh for 12 to 18 months in a cool cupboard. Once opened, expect another 6 to 12 months at room temperature if you store it properly. Refrigeration is optional and will extend that window even further, though chilled ghee gets very firm and is harder to scoop. Most home cooks find that a cupboard spot away from direct sunlight and the stove (which gets warm and shortens shelf life) is the sweet spot.

You'll know the ghee has turned if the color shifts noticeably, if you smell anything sour or rancid, or if you see black spots on the surface. Texture variation alone (slightly grainy, slightly soft, partially liquid) is normal and harmless because ghee contains different fatty acids that shift with temperature.

Why does my organic ghee texture vary, and how do I fix it?

Ghee is a blend of fatty acids with different melting points, so its texture naturally shifts with temperature, including slightly grainy, semi-liquid, or partially separated if it warms up enough. This is purely cosmetic and does not affect the taste, quality, or shelf life of the ghee. Even artisanal home-cooked ghee does this.

To return your ghee to a smooth, creamy state, place the closed jar in a warm water bath for five to ten minutes until the contents are fully liquid, then let it cool slowly at room temperature. Allowing it to slowly cool is the key. If you prefer a firmer set, refrigerate the jar overnight after the warm bath. The structure will reform consistently, and you can repeat the process anytime the texture drifts.

Can I use Banyan's Organic Ghee for Ayurvedic practices and recipes?

What gives ghee its golden color, and why does it change batch to batch?

The golden hue in our Ghee comes from beta-carotene, a natural pigment found in fresh, green pasture. Because our cows graze on living grass, the color follows the rhythm of the seasons: Ghee made from milk that is collected in spring and summer, when pastures are lush and vibrant, takes on a more golden yellow. As grass goes dormant in fall and winter, the beta-carotene levels naturally dip, resulting in a lighter, ivory colored product.

I switched from butter to ghee last year and, after trying a few organic brands at the grocery store, decided to try this one since I regularly order the beauty and muscle balms from here. I HAVE NEVER LOOKED BACK! I don’t know what they’re feeding the cows or if this ghee is blessed by the gods, but it is seriously magical and melt-in-your-mouth. I use it in everything I bake and on my homemade sourdough bread. My family can’t get enough of the stuff. I think we go through 4-6 jars a month! I hope one day they sell this in a bigger size so it’s less embarrassing how often I order it!
