While there are several different varieties of cinnamon, Banyan carries Ceylon cinnamon, also known as "true cinnamon," for quality and sourcing purposes. Ceylon cinnamon, which comes from the bark of the Cinnamomum verum tree, has a light, woodsy, citrusy aroma and a smooth, mild, and sweet flavor.

I buy my cinnamon from Banyan Botanicals because after doing some basic research I've found not all 'cinnamon' is alike and for maximum health benefits, real cinnamon is necessary. This is real!
This is a very mild smelling and tasting cinnamon. I would prefer a stronger smell and taste myself but maybe that is just because I don't really know that much about the different types of cinnamon...
I have been using this Cinnamon for the last few years. I really enjoy the scent. It tastes good. I use in my hot cereals in the morning and on my cooked fruit for added flavor. Its also very good in a Golden Milk. And in desserts. I tend to use a heaping spoonful when a recipe calls for it. I can’t go wrong with this spice. Its one of my favorites!

I agree with the previous review. Several months back I purchased a half lb of Cinnamon and was struck by how much I disliked the taste. It tasted like just bark and not the sweet, spicey taste of the cinnamon I have been getting from Banyan for years. I then realized that the old bag said Cinnamon Cassia and that this new bag is Cinnamon Vernum. I am disappointed to see that the Vernum is the only one I can order. I am now stuck with a bag of cinnamon I will not use because I don’t like the taste at all.

The verum variety is known widely as 'true cinnamon' and has a bit milder of a flavor compared to the cassia variety.
